Veggie Ramen!! 🥬🍜 Didn’t think I would enjoy making this at home thisss much, so definitely a great introduction to the Fall season! 🍂⁣

Ingredients I Used:⁣
– Firm tofu ⁣
– Sliced onion 🧅 ⁣
– Sliced mushrooms 🍄 ⁣
– Cut cabbage 🥬 ⁣
– Green onion ⁣
– Minced garlic 🧄 ⁣
– Sliced bell pepper⁣
– Spinach ⁣
– Vegetable broth 🥫⁣
– Soy sauce⁣
– Coconut milk 🥛 ⁣
– Optional: poached or hard boiled egg 🥚 ⁣

Start off by draining your tofu, cut into thinner slabs, and then season. Place onto a frying pan and do your best to keep as large slabs rather than making them into smaller pieces. Chop and slice all your veggies and start by adding your sliced onions and garlic to a pot. Add in your veggie broth and the rest of your veggies, other than cabbage and spinach. Once you add in your coconut milk, soy sauce, and chili garlic paste you can throw in your cabbage and spinach and cook until all your veggies are soft. If you’re using tofu shirataki noodles, microwave or boil them and then add them to your serving bowl. If you’d like add a poached or hard-boiled egg once you’ve layered on all your cooked ingredients. Add on chili garlic paste and red pepper flakes to your preference!⁣

Highly recommend and saves great as leftovers as well. Just make sure to keep your noodles and broth separate! 🍝 ⁣
