Veggie Crunchwrap!! 🍅🌮 Taco Bell inspired meal which actually turned out soooo satisfying!
Ingredients I Used:
– tortilla (1 & 1/4) (mine’s gluten-free)
– black rice (any time of rice/quinoa would work) 🍚
– black beans
– guacamole or avocado 🥑
– chopped cherry tomatoes 🍅
– chopped jalapenos 🌶
– chopped red onion 🧅
– shredded cheese 🧀
Start with your whole round tortilla and layer on your ingredients, heaviest on the bottom. Once you’ve finished your toppings, rip about 1/4th of a tortilla to cover the gaping whole. Then fold the whole tortilla around that covering, creasing as much as possible. Heat a pan to medium heat (I avoided using oil altogether) and place the folded crunchwrap onto the pan, folds facing the pan. Leave it on the heat for a couple of minutes as this will seal the folds and then carefully flip so the other side gets nice and crispy too!
This was honestly such a pleasant surprise and really hits the spot, especially when you’re craving some carb-ey Taco Bell! 😛
