Vegan Taquitos!! 🌮 🥕 A nice crispy option to change up your dinner menu and get some nutrients in too!⁣

Ingredients I Used:⁣
– chopped onions 🧅 ⁣
– minced garlic 🧄 ⁣
– frozen veggies: string beans, corn 🌽, peas, carrots 🥕 ⁣
– seasonings: salt, pepper, no salt seasoning, paprika, chipotle seasoning⁣
– potato 🥔 ⁣
– sweet potato 🍠 ⁣
– cheese (mine is vegan) 🧀 ⁣
– tortilla⁣

First start by boiling your potato and sweet potato until soft; then mash. Throw your onions and garlic on the stove with some oil and cook until clear. Then add in your frozen veggies, season, and cook through. Turn the heat off and add in your mashed potatoes. Add in some vegan cheese and stir all together. Spoon some of your mixture into the left side of a tortilla and roll into a taquito. Sprinkle some taco seasoning on top and then bake for 15 minutes at 350 degrees. Enjoy your taquitos with some vegan chipotle mayo!⁣
