Stuffed Zucchini Boats! 🥒⛵️ The last part of my chickpea series!!
This was such a savory and warm meal, I highly recommend experimenting with this one!!
Ingredients I used:
– zucchini 🥒
– diced onion 🧅
– diced bell pepper
– garlic 🧄
– seasonings: salt, pepper, no salt seasoning, cumin, garlic powder, onion powder, paprika
– milk (mine is plant-based) 🥛
– shredded cheese 🧀
First cut your zucchini in half and spoon out the fillings. Chop up those fillings along with diced onions, diced bell pepper, milk, and seasonings. Later add in your chickpeas. Once it’s all cooked, fill your zucchini boats and top with cheese. Bake at 425 degrees for 20 minutes and all ready!!
Easily make your boats vegan by skipping the cheese or using vegan cheese and plant-based milk! 🧀 🥛
