Sesame Eggplant!! 🍆 For a girl who LOVES Thai food, this was an ideal meal!⁣ ☺️

Ingredients I used:⁣
– chopped eggplant 🍆 ⁣
– seasonings: salt, pepper, no salt seasoning, basil, chives⁣
– olive oil ⁣
– sesame oil⁣
– rice vinegar (I used regular vinegar)⁣
– tamari or soy sauce ⁣
– maple syrup⁣
– minced garlic 🧄 ⁣
– cilantro 🌱⁣
– sesame seeds (totally optional)⁣

Bake your chopped and seasoned eggplant at 425 degrees for 30 minutes, flipping halfway through. Mix all your sauce ingredients together and then heat the mixture on medium high until it boils and reduces. Once your eggplant is cooked, pour your sauce on, and if you choose, top with sesame seeds. ⁣

This dish turned out so so tasty and highly recommend if you like eggplant! A great vegan and gluten-free meal option 🤩⁣
